Our recipe for healthy protein pancakes

Our nutrition coaches have some great recipes which help our members tackle cravings and progress towards their goals at the same time.

One of our favourite treats is pancakes. We like this healthy protein pancakes recipe because it’s super simple and quick to do. With eggs and protein powder making up the main ingredients, it’s also packed with protein.

We always recommend eating breakfast before a morning workout as it energises the muscles. Research also shows that a high protein breakfast helps build new muscle and boosts our immune systems.

If your goal is weight loss, a high protein breakfast will also keep you feeling full right through until lunch.

Try these protein pancakes on the weekend or for Pancake Tuesday.

Ingredients

  • 2 Eggs
  • 1 scoop of vanilla protein powder (70ml)
  • 1 tsp baking powder for fluffiness
  • A glass of milk, water or almond milk
  • A few sneaky chocolate chips if you’re so inclined

Protein pancakes recipe

Simply crack the eggs into a bowl, then add the protein powder and the baking powder. Whisk it together and start adding the liquid a little at a time.

You’ll want to keep adding the liquid until the consistency is pourable, but still a little thick. Continue whisking for a while to get rid of the lumps. It’s a good idea to start heating some oil in the pan while you’re whisking.

Next, put a scoop-sized amount of batter into the hot pan. This should be enough for one pancake. Cook until golden brown on both sides and serve with your topping of choice. Keep in mind that the vanilla protein powder will give these pancakes a sweet taste before anything else is added.

We recommend adding blueberries, blackberries or raspberries and a drizzle of honey to serve. As well as being delicious, berries will count as one of your five-a-day. You’ll also benefit from their antioxidants, which can aid recovery after a workout.
